I'd go with a EG/EH Hatch. For a few reasons:
The car is OBD1. Easiest to tune/mod.
Parts for the car are easy to come by.
Light chassis. Since you are going to going the "allmotor" route.

i would go eg, whether it be hatch or coupe (thats just my prefference). Great place to start learning, that and i think eg's are easier to find cheaper. I think im about to pick one up in excellent shape cause a guy got layed off for 500 maybe
EGs will be a bit easier, since it's OBD1 and are less prone to the subframe tearout if you put a stiff rear sway bar one in the back. The interior looks somewhat...cheap though, but I think the body looks cooler. Hatches are something you either love or hate. I've wanted one since I was 15 and started looking at cars, and I have a friend who finds them absolutely repulsive.
Unless you really like hatches, get a coupe. There seems to be more of them around in junkyards, so parts will be more common.

EK hatch.
Personally I think EKs look a lot better and are much more unique because you don't really see too many around but on the other hand an EG is probably going to be cheeper and easier to find parts for ect.
All what your into tho...

Well isn't an LS/VTEC going to make comparable power to a B18C1? You just don't have the girdle and oil squirters I believe. The B20B is pretty cheap, and a CR/VTEC would make more torque than the typical LS/VTEC
I was looking at building a "G23" and if you can afford the parts to do it, that would make decent power. It's definitely something to look into.
Otherwise, I was contemplating taking a B series block, sleeving it to run 84mm pistons like the B20 and using a B18 crank, or maybe B16 and get higher revs.

IMO i would go with the EG Hatch and drop a B18B1 with a GSR tranny. My buddy has one and lets me drive it around. GOD!!!! I love it. I plan on swapping my LS tranny with a GSR in my EG8.
ek coupe or eg hatch even though i clicked EK hatch just because you'll prob be less likely to go to class and come back out to find your car gone. Prices on all are pretty astounding atm from private sellers neway so look out for a good deal.
EG hatch is WAY BETTER!!!! thats why i switched my nice looking EK for an EG..
easier swaps
easier tuneup
more available parts
more people know how to fix EG
OBD1 FTW!!!
as for the motor.. B20V all the way ^^.. gsr/itr head preferred.. or get cheap b16 head and put in itr internals =D

Really it's just preference. All of these answers are probably just reinforcing things you are already thinking. Each of the cars you listed are going to have a ton of aftermarket support and can all be swapped etc etc etc. It really comes down to looks...and weight (if you really care that much about that). Personally, I'm going with the EK hatch. I like the looks of the 96-00 Civics and always wanted a hatch. Plus, a car from the early to mid 90's is exactly that. It's not fun fixing and replacing old parts unless you have a decent amount of money. A newer model is going to most likely be in better shape all around. Also how many eg's do you see driving around? Too many. So there's my vote.
