WHAT THE HELL?
I can hardly even get my chubbylittle fingers in there to get to the bulb.......is there a trick or something?

And what about the interior map and dome lights? how do those come out?

For the license plate bulb replacement, normally you remove the whole light housing gently by hand to avoid breaking the plastic clips on the housing, disconnect the 2P connector, separate the lens from the housing, and remove the bulb by hand. (Taking out the housing gives your hand more room to pull out the bulb vs. removing just the lens and pulling the bulb).

For the map light, use a small tip flat head screwdriver with a piece of cloth or tape around the tip to avoid scratching the plastic, and pry gently under the lens from the center area between the two lens.

For the ceiling (dome) light, use a small tip flat head to pry or just use your fingers to pry/pull the lens off.
