Did you install the gasket right side up?
Im pretty sure your supposed to replace the head bolts because they strech out over time...which might lead to coolant leaking into your cylinders...check your radiator is it low on fluid?

One possibility,
If the head gasket was blown before,
or you didn't drain the coolant
before you removed the head,
Then the exhaust is full of coolant and it will take it
a long while to burn off..
Is it consuming the fluid from the radiator or overheating?
If not just keep it running..
A 30 mile drive on the freeway is sometimes what it takes...
