so it wouldnt matter that the downpipe goes from 2.5 to 3 and then back to 2.5 what would be best for performance

go with 3" exhaust it will help spool, and u will not have to upgrade it later on down the road

2.5 -->3" is fine. take 3" out the rest of the way. Actually the gradual increase helps with changing the moment of inertia.
