reusing headgasket after checking p2v clearance
I woulnt really trust to reuse a head gasket after it has been torqued. you might get away with it , but then again it proberly will give you troubles down the road. better to be safe then sorry. i would replace it.
When checking P2V you really don't need to be torquing the head down, just lay it on top and use a couple of bolts/studs to snug down the head. That being said the new gasket won't be crushed and may give you inaccurate results.
Find yourself a old head gasket. I'm sure you'll be able to locate one in your local forums for cheap if not free.

I will reuse a head gasket as long as it hasn't been heat cycled.But as was already said I use an old gasket or feeler guages/shim stock instead of a gasket for checking.

As long as the head gasket isn't heat cycled you will be fine.

there are countless thrads on this subject and everyone has their own opinion, I personally wont reuse a HG. My time is worth more then the few bucks for a new one, but I also get them at my shops price so I may be a bit biased. I might consider reusing a paper gasket that hasnt been heatcycled, but the MLS ones are meant to crush a little to seal properly and if there are any imperfections on the mating surface they wont be sealed properly the second time. if the head and block have been milled recently you might be okay. Lots of people reuse them with copperspray, I am just not one of them. And I guess it depends on how long you plan on having this motor together. I dont like redoing HG jobs because I tried to save a few bucks
