Default cooling disadvantages

I always have this in mind. I'm trying to change to a (spoon may be) thermostat and fan switch to keep the engine cooler. However I'm always worried that lowering cooling tempertures might not be good for cold weather. I have this thought because I'm assuming it's fairly similar to oil temperature - Cooler isn't always better for oil temp.

What are your insights for this? Am I just being stupid or what?
