Default Spare Tire

Ok.

I have upgraded my wheels and tires to 17's now should I remove my spare tire or should I keep it there?

Will it still work 1 15 and 3 17's just in case there is a flat?

Your spare wasn't the same size as the rest of the stock tires anyway. Keep the spare.

Besides, even with a "full sized" spare, if you purchased the correct tires for your 17s, then the outer diameter of the tires should be the same, regardless of the wheel size.
