Could a dying battery...
I noticed one time after I left my lights on for a while and compression started my engine that the RPMs shot up everywhere and the car ran like **** - my car does a similar thing when it's been sitting for a while and I start it up - rpms dance around if I go over about 2k rpms - could this be a sign of a dying battery? Should I get new plugs/wires rotor/cap first?

No the battery will not affect RPM ever really. Its simply a device to help turn the starter over, and then it works with the alternator to electrically power the vehicle once its running, basically.
Hunting Idle is a steady rhythmical up and down idle movement, is it that or is it totally erratic? because hunting idle is rooted with vaccum and idle air control and map sensor type issues.
Its impossible to diagnose over the internet but usually spark delivery problems are rooted with the distributor. Id start there but dont go buying things like crazy, if you dont have a helms or a chiltons, then maybe find a local mechanic to run a quick check on it.
or, if you determined to do it yourself then search on here to find threads with people of similar problems (there are a shitload) to give you more ideas. I'm leaning towards something dizzy related based on what you said.
