My CRX is running great except, just after the temp comes off cold. It hesitates badly until it gets to about 3000 RPM. Maybe choke issue? Any sugestions from the wizards.

The car only does this when you first start it. I drove the car 10 miles today and the car did well, no hesitation while driving? The coolant maxed out the temp gage. I cooled it down and pulled the thermostat and put it in a water bath. The thermostat cracked off the seat at 185F. there was no water at the thermostat when I pulled the housing off. There was water in the overflow tank? Oh yea, why did they put the thermostadt at the entry to the block and not at the exit? This is the first time I had ever ran into this. I have been working on cars for a long time and had never seen this.
