Default I have a hard time checking my coolant

The container that holds the coolant is at the bottom and it's hard to tell how much coolant I have.

How do you guys check?

If you're looking at the plastic bottle, that would be the coolant overflow bottle. It's not supposed to be full of coolant for a reason. You're not supposed to fill it up, in case the engine runs exceedingly warm and needs to vent some coolant vapor. As long as the radiator itself is full, that should be all the coolant you need.

actually, wouldn't you want to put SOME coolant in it? the way i understand it, is that when you shut the car off, a bit of a vacuum is created, and if there isn't any coolant whatsoever in there, over time you could get air bubbles in your system.

Some coolant is fine, but nothing more than about a cup or so. You want room for expansion, otherwise it'll be blowing coolant everywhere.
