log manifolds are made out of wood and ramhorn manifolds are made out of the horns on rams' heads. the horn material is stronger than the wood, so it ends up costing more.

All things else the same, the log manifold will spool the turbo faster due to the short runners; however, it will also lose more up top. It will effectively give you a more linnear powerband. The ramhorn has a true collector and longer runners which will increase lag; however, since the collector flows much more efficiently than the log, it will make more power up top.
