It will bolt up to your 2000 GSR without a problem. Unless it is the 2.5" Collector, which hopefully it is, then you would obviously need a 2.5" inlet Cat.

I thought all kami headers were 2.5" collectors

I'm running a 2.5" kamikaze on my GSR. It's an awesome piece, but didn't fit very well. After a bit of struggle, it cleared the oil pan.

As for whether it fits, any B series exhaust manifold will work with any B series head. It's the intake manifols that are different. The b16, and b18c5 are swappable. The b18c (GSR) is the oddball.

It's available in 2 versions. A USDM stock bolt on with a 2" collector, although the tubing under the car is 2-1/2" and one with a 2-1/2" collector that is built to the JDM headder length. What I've seen with the 2-1/2" collector piece is the tubing of the collector sticks out way too far past the donut and will need to be cut so it only extends about 1/8". Also, note that this header has a true 2-1/2" collector and not the 65mm like the JDM headers so it need a different donut.

Also the bolt hole spacing on the 2-1/2" collector is not the same as the JDM header.
