the adjustability of coilovers is always a better option (if you can get the car balanced), but it really depends on what the normal usage of the car is and what you like for ride quality.

Stiffer is usually better on the track and strip, but not so on the street.

IMO, pick up a set of good coilovers with a good track setup, then pick up a set of drag springs for them. Swap when needed.

Depending on the car and spring rates, either remove it completely or "upgrade" to a smaller bar.

removing the front bar, or "upgrading" to a smaller bar means more oversteer.

Less bar in the front or more bar in the rear = more oversteer or less understeer.
more bar in the front or less bar in the rear = more understeer or less oversteer.

upgrade is a bad term to use for this type of thing. One persons upgrade is a downgrade to another.
you have to tune the suspension to your driving style and how you are going to use the car.
