I've been wondering if wider rear tires would compensate for non-staggered wheels and have it act like a staggered setup. for example, my s2k is currently on stock AP1 rims which are 16x6.5 fronts, 16x7.5 rears.. (205wide front, 225 rears) now lets say if I got a 16x7 all around and put 205 front and 245 rears, would it be similar?
reason being i've found a set of nice 17" rims, but they aren't staggered

Nope. Whoever you have put 245's on a 7" wide wheel is going to have a hell of a time doing it. It's not going to have the stagger effect you are thinking, sorry.
Another factor you're not going to be able to work around, in addition to the problem with the same width even though the car needs wider tires in the rear, is the center bore. I believe the S2000 needs wheels with a different center bore front vs rear.
Your best bet is to find wheels that are made in sizes specifically for the S2000. Don't try to use wheels made for some other car, that don't really work on the S2000.

hatchling- actually 245's on 7.5's are the usual rears because the stock s-02's have the contact patch of a 245 even tho they are 225. i believe it is the offset that makes it possible..
nsxtasy- very informative as always
