Stage 1 is your basic everyday clutch. They use organic materials to make up the disc, and can handle stock amounts of power from a car. Stage 2 clutches typically use cerametallic material for friction, which can withstand significantly more power than the stage 1. The cerametallic has a higher coefficient of friction so it's more resistant to clutch slip. The stage 3 usually uses a sprung disc or puck, which, depending on the springs used, can withstand godly amounts of power. These are typically used in drag cars, higher end sports cars, etc.

With an H22 swap into the accord I'd think that you would be safe to stay with the stage 1 unless you're going forced induction. If like taking off hard and drive agressively, you might want to do the stage 2 just to get a better feel.
