What I try to do is measure from the top of the spring pirch to the bottom of the spring pirch assembly. Say you get 2 inches. Do the same on the other side and see how it sits. Usually, I only have to make one or two more rotations on one side, and sometimes it comes out good. Just make sure it's nice and level and you're doing this on a flat surface with no added weight in the car: ie-pregnant girlfriend in passenger seat.

What do you mean by sag? I have newer N1's, and they're holding up pretty good. Actually, sometimes the adjustable pirch deals come loose if I don't get them good and tight together, and it might raise/lower that assembly.

Nope, haven't had that problem with the N1's, they're a good setup. But I bet after awhile it will happen. I wonder if it would be a good idea to switch the passenger side assembly with the drivers', seeing that the drivers side takes most the weight. But no, no problems yet.

They always settle a little and sag a little bit. Sometimes the front driver side may settle in lower than the rest of the car since there's your added weight there. As far as evening it out, I usually use a little ruler and measure it out.

ideally, you find a set of scales after you've got the car about the height you want it and get it balanced perfectly.

I'd love to setup scales in the garage but not now someday.

I try to find the flattest spot possible and then measure from the ground to the pivot point of the lower control arm. Near the frame. If you try near wheel it won't work .

But I ultimately want my car to slightly over steer so I have the rear slightly lower then the front.

Look at this picture I took of the Cunningham's RealTime ITR at the Lime Rock race. You can see the car is actually higher in the front than the back to get the weight distribution right. Can't argue with the results.
