It shouldn't go more than 225 even with full blown bumper to bumper

check the t stat and flush it out with new coolant preferably engine ice

199-205 isn't bad. 245 is bad, and at that point you should be turning the bike off. I believe in the manual it says at which temperature to turn the bike off.
Change coolant.

Hi,
I had overheating on my 05 up to 240+ too. First follow most of what has been stated. Check radiator cap, thermostat, and coolant levels. Next is most likely a huge air pocket....so shake the hell out of your bike and burp out the air. I did all this....and it still was overheating. My solution was first installing a Muzzy fan blade to the stock fan. This helped, but once temps get over 217 (when my fan kicks on)....it's not enough to bring it back down. Next step was ordering a used fan off ebay for $20 and ordering another Muzzy fan to go with it. I installed the Muzzy fan blade onto the new fan, then wired it up to the existing fan with quick connects and wire nuts. Then turned on the bike and let it heat up.....both fans turned on at 217. next step is to install the second fan on the radiator. Pull the fairing and drop the radiator down enough for room to work. Run new fan wires to other side of bike from old fan wires. Attach the new fan to the old fan bolt using a 2in bracket. Use a couple hose clamps to attach lower fan bracket to the low radiator hose inlet (on RT side of Radiator). Use a couple zip ties to secure last fan bracket to above radiator mount. Use 1 - 2in metal spacers with bolts to keep the fan blades from hitting the radiator. Tighten it all down. Voila....your done! I let my bike run and it heated up to 217....both fans came on and temps went from 220 back down to 209.....then rose back up to 217 fans came on and temps went from 220 back down to 210. All this while bike is sitting/non mobile. Works great.....probably why they began installing dual fans on the 08 and up models!!!!

Have you guys checked your owners manual for info on this?
The 02-09 VFR800's run really hot too, but I guess water temp can go up to 272* before it starts alerting you (It turns red I guess) on the cluster. I've only seen 227* so far.
