get paper plates in state your buying, pay transfer of title in state your buying it in, tell your insurance company about new car and to put you on policy immediately. then you will pay for smog check, insurance, and registration in socal. done.

I moved from DE to WA and drove on my old plates for awhile (granted this was already registered in my name). I eventually renewed my plates and registration in WA and everything went fairly uneventful.
Then again, purchasing a car from out of state could happen another way (I'm betting it's similar though). Call up your local DMV and they can tell you exactly what you need to do for sure.

It looks like you're going to need to certify it to meet CA smog laws before you can register it. 50 state cars are made to be sold to CA residents, while 49 state cars are not (they just meet federal regulations). The label under the hood should tell you which yours is.
The DMV should be able to clear everything up about the transfer though.
