Default bad temp sensor maybe? overheating

so i was out driving my sedan, everything was running fine, then i look and see the temp gauge climbing up suddenly and quick. so i pull over immediately and shut the car off. pop the hood, and i dont see any signs of leaks, the overflow has coolant in it, and the radiator cap isnt even hot. fans are working. i turned the key back on, let the fans run and the temp dropped. i drove home, and the temp was going up and down, i would turn it off when it was at the H and turn it back on and it would only go to normal temp. im confused here. maybe the thermostat

if you have a spare sending unit throw it in. My last car would say it was always cold it would never warm up but the heat would blow fire hot. I changed the sending unit and the temp read normal like it is supposed to, Your best bet would be do get a cheapo no name $10 mechanical temp gauge and rig it in temporarily to see if you are really overheating.
