wet sanding
Starting w/ 2000 is fine, will cut fresh clear quite well, won't harm it as long as its done correctly. For a whole car w/ fresh clear starting w/ 1000 or 1200 or 1500 would be fine. It really depends on a few things, skill level, how bad the peel is, what you want the finish to look like in the end, just knocked down or flat sanded, the area that your sanding, whole car or just a panel, how much clear was applied, ect. I sometimes start w/ 1200 or 1500 then 2000 then 3000 on a DA. Sometimes starting w/ 2000 is the way to go, for small areas, just to knock down the clear a bit.

Just be careful you don't sand too far down. The only drawback to using too low of a grit is that it will take longer to polish out the sanding scratches
