17X7.5 wheels
im considering buying an 06 s2k and i have a set of volk 17X7.5 wheels 50mm offset. i was wondering since the rear wheels of an s2k has 17X8.5 wheels in the rear, can i fit the volks in 245 width tires in the rear and have the same traction as 17X8.5 wheels

I would say it's best to use the same size as stock or larger. Don't go smaller. You can always run a wider tire though. For instance on my AP2 wheels, I run a 255 instead of 245.

yes and no, even the bigger tires physicall fit into the smaller wheel, the sidewall will be distorted and the contact patch will be deform. there's certain size for a set width a tire that will performs best when mounted.
just because it fits when you force it in it doesn't performs compares to a right width wheel with a right width tires.

don't run a 7.5 in all 4 corners.
