Best 17" Setup?
Besides trying to achieve looks. How will:
17X7.5+48 5X114.3
17X8.5+48 5X114.3
Handle compare to stock?
Is there an ideal 17" Setup we have to go for? I am planning on slamming the car too... Would I need to roll the fenders with this?

besides looks? if your tracking your car at all, thats a poor set up. not sure about rolling...with such low wheel widths my non wheel expert opinion is you wont probably need to roll at all with some minor neg camber. almost ap2 sizes except the offset is lower.
I'm running:
Front: 17x8 +43
Rear: 17x9 +47
Looks great and drives great. I haven't dropped the car yet, but i believe i should clear the fender when I do...long as I don't run any really meaty tires.

To each their own.
Driving around with a lowered car is a PITA. Trust me, I know.

without going mega buck, lowering without proper hardware will mostly contributed to decreased handing ability.
