Alright, first off, what kind of car do you have? I'm guessing by the first post you made, you're just starting with cars. Are you sure you bled the system correctly? If you dont do this you will get bubbles in your system that will keep the thermo from opening.
If your car is OBD1 (92-95) there will be a little nipple on the head that you can bleed it from. If you put your hand on the top rad hose, and then follow that hose back, you will see it. Its a 12mm bolt. Loosen it and start the car. When no more bubbles come out and its just a steady stream of coolent, you're good. Top off the fluid and close it and you're all set.
If your car is OBD2 (96+) just take the rad cap off and let her run. You notice little bubbles keep coming up. It'll do this for about 20 min before the system is completely clear. Once its done, top it off and put the cap on the rad.
