Default should i re-torque?

im bout to change oil pan and pick-up on my rebuilt C5. im changing from stock to moroso parts. my engine has about 2800 miles on it, should i check the main cap bolts, or the rod bolts while the pan and pick-up are down?

You may as well as long as you're in there. You don't need to loosen and retorque, just put a torque wrench on it and make sure the bolts didn't loosen themselves any. Chances are as long as it was assembled correctly it'll be fine, but it's good peace of mind.
