First of all, you need to understand the difference between all-season tires and summer tires. Summer tires are designed to perform well in moderate to warm temperatures, in rain as well as on dry pavement; they are not very good in snow or frigid cold. All-season tires are designed to perform well on snow and in cold temperatures as well as in warm weather; the downside to this flexibility is that they don't perform as well in warm weather as summer tires (and they don't perform as well in cold weather as winter tires).
The Falken Ziex ZE-512 is an all-season tire (and it's not even all that great of an all-season tire). In moderate to warm temperatures, it won't perform anywhere near as well as your current ES100 tires, which are summer tires.
Unless you spend a lot of time driving north of your home, you really don't need all-season tires. I suggest getting another set of the ES100, or other very good summer tires such as the Kumho Ecsta SPT, Dunlop Direzza DZ101, etc. Don't get a tire whose performance is a lot worse than what you have now!
Regarding the proper size, tell us what kind of car you have (year, model, version) and what size wheels you have (that's the last number on your current tire size) and we can tell you what the best size is for your car. It's possible that you can get some really good summer tires (like the Kumho SPT) for not much more money than those crappy Falken all-seasons.
