Well they sell lighter windows and such, carbon fiber hoods/trunks. But you said interior, so which interior are you referring to? I doubt ur gonna find much lightweight interior as it's not a lot of weight to begin with. I think racing seats are probalby lighter O.o
What kind of parts are you looking for that are gonna be lighter than plastic? You will find nicer looking pieces if you buy or make them, but it doesn't get a whole lot lighter than plastic.

or possibly by taking out huge sections of sheet metal.

You can loose weight by taking out the plastic pieces, but not that much. Maybe 10 pounds for the whole interior, and another 20 with the dash(not including the seats). Just speculating, but it can't be that much. With everything removed I would say maybe 75 lbs. I guess better than nothing, if you like driving around like that.

i bought some sparco seats and wow they are amazinly light but then again expensive
so if you want to lose weight i highly suggest swaping the seats and as for the rest of the interior i wouldn't suggest it but i do know that they make some carbon fiber stuff to swap interior stuff with but then again not worth how much they charge for it cause your not really losing that much weight. Gutting the car is somthing i have always been against, instead you should go to the gym and lose 20-30 pounds and leave your car alone. oh yea i guess you could also take out your a/c where you would lose some weight from losing your compressor and condensor but then again your talking about the interior so as for interior they make a few but none worth wasting money on besides seats.

I was thinking in terms of the dash, door panels, and/or any heavy pieces of metal that could be removed without any damage to the vehicle's interior or makes it unsafe for me...

as far as safety goes, you could remove all things plastic, carpet, and seats. but as far as metal, I can't think of anything that could be removed that would not compromise everyday use.

Oh yeah... he was 260lbs.

Rear seats, sound deadening, spare tire and jack. carpet, floor mats, door panels.centre console, anything in the glove box. Really anything that you can think of. It will add up, but u wont notice that much of a diff. I did all that and I couldnt tell.
When I decided to convert my show car (88 CRX) to full race I weighed everything that came out. I stripped everything out including the dash and dash supports, heater core, factory wiring... everything. I then weighed the seats and aluminum that were going to be put in. Total weight savings... 145lbs. Theoretically, that much will save you .145 of a second off of your quarter mile time. That is not worth the road noise and ugliness that comes with it (my opinion of course). The only place that I really saved weight was by replacing the rear glass with Lexan and by adding carbon fiber doors.
If it is a street car, I say leave the interior alone.

If you want light seats, get some Status carbon buckets. Uncomforatbale as hell for streeting, but they hold you in, and they weight nothing. They have a picture somewhere of a shop-owner's 6-year-old daughter holding one in one hand.
the other day a budy of mine was telling me that there is a company that produces carbon figer dashes that have the stock lines to them and they also do door panals but ill try to find out the name of said company tomarow
