Don't post if your not going to help or try to.
I'd use the temp sender near the waterneck, just because its easier to reach.
Spray some engine starter fluid around the manifold, if the idle goes up you have a vacuum leak, make sure the tb is closing all the way, also check to make sure you are using the right ecu and you dont have any sensors switched.

Use the temperature sensor that goes with your harness so you dont have to cut anything. Your harness probably has it for the one in the back of the block. It should be two wires that are inside a big plastic boot. I believe one wire is black and the other one is yellow with a green stripe.

As for the vacuum leak. Try getting a vacuum gauge and check the vacuum.

wow?

anyway, i do see one problem. in the pic that you provided the hose coming off the valve cover is going to the wrong place. you have it going into the intake mani. the nipple on the intake mani is the port for the pcv valve. if you don't have a pcv valve in the system it will idle high. the nipple coming off the vavle cover needs to run to the intake "arm". am i making sence. try and see if that works
