So when I changed my trans fluid in my 00 accord se...
I had my trans replaced under warranty at the dealer. I went to change my fluid myself for the first time on this car and snapped the ratchet because the plug was so tight. Im guessing it was well over 100lb/ft instead of the recommended 36. Do you think there could be any damage done by having on that tight?
As long as it didn't crack the case along the threads, no harm done. Look at the threads on the plug to be sure they aren't 'pulled' in one direction and if it looks okay reuse it with a new crush washer.

give it a quick jab instead of turing it slowly, metal to metal contact(gasket/mating surface) will more prone to stripping if you turning it slowly

It looks okay. I finally managed to get it off with a heavy duty ratchet. I tried a "quick jab" but Im telling you this thing was TIGHT. I can't even imagine why they would do that, even if it was with a impact gun
I changed the fluid last night(42k) on a 4 cylinder '02. Next time, go to your local auto parts store and buy a penetrating spray called PB Blaster. Spray it on there, let it penetrate for a minute or two, then loosen the bolt. Also, we used a breaker bar from Sears instead of a ratchet. It came off very easily. Hopefully, you changed the crush washer as well.
One question, when did they replace your tranny, and what were the symptoms?

there is no need to use any kind of penetrating oil on the plug. next time give it a light hit on the plug wih a hammer and with your ratchet attached to it give it a sharp hit with your hand and it will come loose.
