With a single cam you adjut the exhaust cam and intake cam lobes at the same time. With a dohc you have two cams. One for intake, one for exhaust, and you can tune them seperately.
IN a SOHC when you adjut the cam timing you advance or retard both at the same time, not in opposite directions.
In a DOHC you can advance exhaust and retard intake. Where as you can't do that with SOHC.
