Which castle nuts? You mean the ones on the ends of the axles? (There are a bunch in the front suspension on different parts.)
For the axle nuts, you need to lock the wheel into place somehow. Probably the easiest thing is either have the wheel on the hub and the car on the ground. Then you can have someone stand on the brakes while you put all your weight on a breaker bar with an appropriate-length cheater pipe. (Figure out the torque spec, then figure out how much weight you can put on. A little math will tell you how long the cheater pipe needs to be. For instance, if you can put 125 lbs on it, and the torque spec is 250 lbs, you need a two-foot bar.) You may be able to wedge something through the lugs and brace it on the ground.
If you mean other castle nuts in the suspension, you gotta tell us which ones. Usually you just hold the part as still as you can or let it turn as far as it goes, then crank on it with a socket and ratchet. Torque to spec, then line up the nut with one of the holes in the stud and put the cotter pin through.
