weird problem after tstat change

i been tryin to find out what is wrong with my car. heres whats goin on. i changed my tstat when the car stopped warming up. just a standard thing right? so i changed it, and it warms up like its supposed to, and pretty much stays right at around 3/8 up on the gauge. heres where the weird problem comes into play. my fans never kick on anymore since this tstat change. BUT, it also never over heats, it stays right at 3/8 gauge. also, just to make sure they worked, i turned on my a/c and they both turned on. heres another problem, randomly if im sittin at alight the car idles around 750-780 rpm usually(within spec). then, it will just drop to mid 600's, sometimes lower. and it will stay at that point. BUT, if i turn the climate controls on and off real quick, it idles right back up to where its suppsoed to. wtf? how can i be having these kinds of problems, just from a tstat change?
I just did a thermostat change on my car too. I haven't noticed the idle issues that you speak of, however, I have noticed that my fans run less frequently. I guess you can consider this a bump for some more information.

i mean if they are supposed to run a lot less frequently, then thats fine. im just not used to these things not kickin on while im sittin in traffic anymore
