Default How to know how much to shave off cyinder head

Just like the topic says, how do i know how much i can shave off the cylinde head and still be safe with valve to piston clearances?
Running sk2 stg2 cams and cp 11.6cr

clay the head and block to see how much clearance you have.

clay the between the head and block to see what kind of clearances you have to work with.

And what's teh minimum tolerance i can have?
To know how much i can shave off i need to know the minimum tolerance between piston and valves.
Can you help me out?

The gas i'm going to use will be 100octane.
I was thinking of running 12:1 or 12.5:1 but i was going to stay with 12:1
