Did you mess with any of the components of the gas tank during your swap? Accidentally plug a vent or something?

There was a guy on here a few months back with the same problem. He'd get in a gallon or so and it would click off.
Try getting some plastic tubing that you use for like fish tank air lines and put just a bit of it into the opening for the pump nozzle. Then put the nozzle in and try to slowly pump gas. That should help relieve some of the pressure while you are filling up.
Sounds like the pressure relief hole/valve is clogged up, which causes pressure to stay high in the tank, which causes the nozzle to cut off before you can get gas into the tank.

Yes. I've never had the problem, but I think it should relieve at least some pressure if your vent is blocked by something else. That should allow you to at least get a little bit of gas in the car.
*WARNING* MAKE SURE YOU GROUND ANYTHING THAT YOU PUT INTO THE GAS TANK! IF IT HAS ANY KIND OF STATIC CHARGE IT COULD IGNITE THE GASOLINE. *WARNING*
