What is the purpose of the "resonator" portion of an exhaust?
I'm thinking of having a custom midpipe done up, and I assume the thicker part of my stock midpipe is the resonator. What's the purpose of it? Noise reduction?

It quiets things down a bit. You won't gain anything or lose anything by removing it. It'll just make the exhaust a bit louder (a very negligable amount, if you're looking for loud the answer is not pulling the resonator), regardless of what muffler you've got on the car now.

From my experience it changes the tone of the exhaust too. I know someone without a resonator and it sounds higher (but not good) rather than deeper and throaty (good).
