Uh...yeah it needs to be tuned or at least put back to the OEM specs. Fuel pressure, ignition timing, valve lash, idle speed etc should all be checked and adjusted to get it running good.
Do you have any lightweight rotating parts?? I have an 8lb flywheel, UR crank & alt. pulleys, no PS or AC, ST Corsa cam gears and no balance shafts and mine goes way down when I disengage the clutch but doesn't stall out....and all my stuff is set to OEM specs.

Well, do a valve adjustment, set your fuel pressure (might need a regulator and gauge if you don't have one), set your ignition timing and I forgot to mention your cam timing by using the marks on the cam gears and flywheel, and adjust the screw on the throttle body to get the idle higher/lower to where you want it.
Get a manual if you're not sure how to do all that stuff or search on this site and the web.
