Default Wiring question...

I'm taking everything from my busted 98 coupe and putting it into a 00 hatch shell. All of the wiring in my hatch is still intact, so I'm going to re-wire the rear coupe harness to the hatch, here are the wire's coming out of the hatch:

Red w/ Black stripe-License Plate lights
Blue w/ Black stripe-Window de-foggers
Dark Green
Light Green -Windshield Wiper Motor
Light Green w/ Black
Black-Negative/Ground for all?
Dark Green w/ White-Upper Brake Light
= 7 wires total
So, in order to rewire my coupe harness, can I cut the plugs(which each have 2 or more wires atached, except the window de-foggers) off of it and color match?, resulting in 7 negative/ground(from the coupe harness) wires spliced into one(hatch black wire), or is there another way I should do this?
Trace the wires of each component down the wiring harness until it becomes one wire coming from the dash?
Can use whatever help i can get...

Does anyone know, if something in the initial post doesn't make sense just ask, somebody must have done this before, 37 views-no answer.

Thanks, you just reminded me, the plug was cut, that was th reason for the wire descriptions^. I'm also not using the existing (i assume you mean coupe) harness because it isn't long enough. I would never be able to open the hatch.
