Putting head back a few questions
you can use the head bolts again so long as they arent stripped or havent been on and off a million times. i used my stock ones on my old motor about 7 times. just make sure you torque them and lube them enough

I agree. You can reuse the stock head bolts. Always use new headgasket.
2 layer headgasket is fine it will bump up your compression. As for the valves, you will need to reseat the valves to make sure they seal and have no leaks. Unless you know what you are doing I would not suggest a DIY for the valves.
