Default New to board and search isn't working. Is 5-20W oil critical for my '05 V6

Just wondering if I can get away with 10-30W or 0-20W. I am using Mobil 1. I am familiar with viscosities and oils in general. I am mainly wondering if there is something specific (like the variable valve timing) that requires this exact weight. For example, if you run the wrong weight in a VANOS equipped BMW it will ruin the system. Seen this first hand.

5w20 recommended by Honda to get the ULEV/30mpg mileage rating. Its super thin. I run my 03 V6 with 5w30 Mobil 1 synthetic, as well as my 01 bmw all year round with out issues. Oil change both every 5k miles.
