2. Does it happen under load?
3. Does it happen under all rpm ranges?

From your post, it could be many many things. We need to narrow it down to diagnose it. That's why mechanics can weasel so much money out of some people. Some lady will bring in a car and say, "It overheats, fix it." The mechanic will try 20 things and charge her for it. But if you say, "It overheats under highway driving, the thermostat still opens and works, and I'm slowly loosing coolant," then it can only be a couple of things.
