it depends on u really...in my opinion he shudnt have taken off ur power steering just cuz HE felt it was better, its ur car...but regardless, yea u get more feedback from the road while cornering without the powersteering so u have a better sense of control of ur car, and of course the obvious less weight...but without the p/s it wud be dificult to turn the wheels at low speed, example being paralelle parking..so it all really depends on u, if ur strong enough that the extra effort it take to turn the wheel at low speeds doesnt bother u, it wud porb be better to leave the p/s off....
I would certainly hope that your engine swap guy asked your opinion, and how you were going to drive the car before he scoffed your pump & hoses.
My thoughts?, if you're going to drive on the street, put it back on.
Now let's see if he can produce your old parts.......

open up the hood and chk to see if all he did was to not install the p/s belt ,,if so u can put it on and chk for urself which way u like it better .In the other hand if pump, hoses, etc . is not there then like P- says i would talk to the man to produce the parts he did not install if it was done without your consent ,

what size wheels do you have on your car if you've got DuB's
then leave the power steering on the car, if you've got good ol 15's or 16's you should be strong enough where you wont miss your powersteering, my 15's weigh in at 11lbs i dont have powersteering and i can turn the steeringwheel of my crx with minimal effort at low speeds.

IMO I'd toss the power steering. Its pretty funny after driving non-p/s for awhile then you drive say parents/friends car with power steering you suddenly jerk the wheel assuming theres no p/s.

Power steering is probably a good thing to have. If you have no room for a pump, thats one thing. I would personally not drive without it. I don't think you can find a rack for an accord that doesn't have power steering... but if you could that would be optimal. Manual racks have different ratios, and are easier to turn than power racks (when power is disabled) They are also smaller and lighter. It's an opinion thing, but i wouldn't want to be driving and have to suddenly swerve out of the way to avoid an accident and not be able to do so...
