what type of metal or steel do i use wanna get my turbo project on the way

Why not just buy a manifold? There are several high quality ones out there, some are very affordable as well.

Get a HF mani with adapter plate to start with.

I originally came across this article from SDS that explains how to do it. You can substitute schedule 10 Stainless Steel from McMaster, catalog page 11, part #45735K215.

Also check HMT and do a search there.
