we make some cool little mounts that can be made to fit anything if your creative.... standard 1/4-20 and 3/8" holes for attaching whatever.... check out the UL90 series wall mount at http://www.icw2.com. We also offer pole mounts in 1.5, 1.75, and 2" sizes if you have a roll cage in the car.

I see. Thanx for the clear up.
Theres a few ways.
1. Make a mount somewhere in the car, set the timer to 10sec, roll with it.
2. Use a pod in the backseat, set the timer, and roll with it.
3. Get someone to sit in the back seat and take the pic for you.
Settings:
Iso speed around 50-100. Give the shutter around 0"6 and do it when its dark to get all the lighting effects.
This is my way of doing it though, and im sure theres many other ways, which are better.
