Does new clutch feel soft or should it be hard?

depends on the clutch ... well, more importantly, the pressure plate. An OEM clutch kit will be pretty cushy, just because it doesn't have to hold much power and it probably won't be ragged on. When you go to a higher performance clutch kit, like an ACT HDSS, then it'll be stiffer because the pressure plate can exert more clamping force on the clutch disk.
edit: just so I don't make generalizations, not all performance clutches are stiff, and not all oem clutches are soft

Does your car have a cable or hydro tranny? An oem replacement clutch will feel pretty soft in both, a race clutch (ACT, Clutchmasters, ect.) will feel much harder in a cable clutch, and pretty hard in a hydro. My ACT made the clutch(hydro tranny) a little harder, but so hard to make it annoying to use. The same clutch in my buddys Talon (cable tranny) made the clutch pedal very hard.
