Removing stock gauge cluster for custom gauges? Any hidden problems?

My ITR's shortblock and tranny should be heading out to RandD sometime very soon and I've been thinking about upgrading my engine monitoring devices especially since after it returns the R will be turning into more of a weekend warrior. Hopefully there will be many track days in the R's near future.
I of course want to be able to monitor the R's oil pressure, oil temp, and a few others while on track and have been trying to decide where to place them. I could always go with the A pillar but for some reason that just sparks someones unwanted interest in my car that much more.
So I've been thinking instead of trying to place the gauges around the stock cluster why not remove it entirely, fab up a nice black backing and install my own set of gauges? I could also upgrade to a more accurate tachometer and place it dead center (right where it should be if you ask me).
My question is can you just unplug the stock dash harness and zip tie it up without any ill effects?
