I just had the coolant drained and flushed at the dealer (along with a lot of other things). Before I left the dealer the coolant in the overflow tank was at the max line. However, after 35 miles of driving the overflow tank was empty
. Should I worry about this and should I top off the overflow tank asap? Thanks

No big deal, just top it off with a mix of coolant and water. Usually this happens because air bubbles escape or they forgot to move the temp switch, so the heater core was closed when they were filling it.
Once you fill it, you should notice it go down a bit more after driving it, just keep topping it off until it stays consistently at the max line.

after you've drained and refilled... it may take a bit for it too actually cycle through.... just keep it topped off and watch for it. the dealer should have ckd for that before they let you take it. it's no biggie tho..i did a coolant flush myself a few weeks back and i had to refill the reservoir tank a few times before it finally stopped going through. no worries guy just keep an eye on it. if it bothers you that much... let the car sit parked overnight and ck for any poss leakage the following morning...but i doubt it will be an issue
