the difference between a five angle and a three angle is what it sounds like

three is usually 90degrees, 60 degrees, 30 degrees

five angle is the same as three but in adittion to 15degrees, and 120degrees

the degrees are the angle cut into the valve seat this creates a channel for the air to enter the combustion chamber

just think of the time spent on the porting would have cost more then the list price alone, but id try to get it for cheaper but thats just me

5 and 3 angle valve jobs are both good.

BUT, the valve job is only good if the quality of the work is good. Any machine shop can do a valve job, finding a good place that does it is the key.

The valves look oversized, are they?

I seriously think you might run into piston/valve contact with that setup. Make sure you clay your motor. You may need a slightly thicker headgasket - don't even think about removing the middle layer.

Has the head been milled, or has the block been decked?

Can you elaborate more on his statement? An explanation of the pros of each valve job.

I'm a little confused, you're asking me to explain his remark? If you're asking me for my opinion on valve jobs it's easy you use what works best for the application. That may sound somewhat vague but you can't go into a job pre-determining things like that before you get started.
There was a day last yr where I did valve jobs on 3 sets of Grand National heads for Localio ,all 3 were at different levels of porting and for different applications so they each got different valve jobs, one got a 5 angle and the other 2 got 3 angles but the seats were different widths and changed throat and top cuts, and all had 2 angle into a radius for the exhast seats.

didnt mean to confuse you, but your answer s exactly what I was looking for. Thats what I meant by elaborating on the subject so others understand what the importance of a valve job is and not just ANY valve job will do.
