At what point does having more rubber on the ground become more important than lowering roll center?

EF hybrid
225/45/15 hoosiers and ride height at ~4" to front and rear jacking points....
or
245/50/15 hoosiers and ride height somewhat higher (~1") + fenders rolled even further.....
