Which metal can be mig welded, which metal is dangerous ?
I'm not a metal expert so go easy on me. My question is, I keep seeing things like carbon steel sheet metal, can that be mig welded or flux core welded ? Also how about brass and alloy. I can't think of any others as of now but I'm sure I will come across some more. Also is there any metal to stay away from because of the fumes or anything like that ?
when welding anything that has been coated (i.e. aluminized or galvanised) just MAKE SURE that you've got all the coating off the fumes are toxic.

Interesting, ok thanks. Anyone else, it might of been better if I asked what can't I weld with a mig welder or flux core welding.

It depends on what type of GMAW (Gas Metal Arc Welding) setup you have.
Just about every GMAW machine (Mig or Flux-cored) can weld mild steel.
You can use a Mig machine to weld stainless steel as long as you have an appropriate shielding gas.
You can Mig aluminum providing you change out the inner liner of the cable for the gun or use a spool gun, either way you'd need to use an appropriate shielding gas. It also helps to have an A/C machine for aluminum. There's also aluminum flux-cored wire, but it's usually used for large runs welding thicker materials.
Those are the most typical materials that can be used with the GMAW process.

So say I buy some carbon sheet metal, will I need anything special to weld that ? The only thing that confuses me is its carbon.
