Default breaking in

Ok so here is the setup

1999 Accord 5 speed F23 vtec
rebuilt the bottom using all honda parts
p&p head,manifold
64 mm tb
ss valves
crower regrind cam
aem fuel rail pressure regulator and v2 intake
venom programmable nitrous vcn-2000
obd 2 - obd 1 conversion
jdm p28 ecu
hondata s200
python 550cc injectors
python electric fuel pump

just wondering what the best way to break this motor in

I am getting it tuned at p1 auto in charlotte but I dont know if it will run without being tuned. Should I leave it as stock as possible until its broken in and then switch injectors and obd to have it tuned or should i convert to obd 1 without tuning.
