What is the essential function of using the oil catch can?
From Options description of the Cusco unit:
"Cusco Oil Catch Can works just like a crankcase vent filter. It will bypass the connection between the crankcase and the air induction intake track. This will relieve pressure place against the valve train under engine load. But unlike a crankcase vent filter, the oil used by the valve train will not drip onto adjacent engine components. The oil catch can will ‘catch’ all excess oil that is blow out by the valve train. This will keep your engine compartment clean, your performance maximized, and give your engine that custom look."

Basically when you run the bypass hose out of the air intake, it give you some place to put all the **** that flies out.
The PCV valve on the top of your valve cover has a hose that goes directly to your intake plenum. PCV stands for Positive Crankcase Ventilation. Crankcase gasses are pulled/pushed through the hose into the intake. These gasses have alot of water, oil, sludge in it that ends up being run through the engine and burnt off. The oil catchcan acts as a filter and filters and much of this crud. The crud doesn't actually hurt your engine, but it does lower the octane level of your gas. If you're running a fairly detonation prone engine (FI, or very high compression) it can be useful.
Some people will run open atmosphere by just plugging the hole on the intake plenum and putting a filter on top of the breather can. This will eliminate any oil vapor getting into your intake air. I did this for a while, but I put it back to running closed loop. My engine didn't seem to like it.
The Moroso can is baffled inside and is labeled as a breather can. The Greddy can is not baffled and is just pretty much an empty can and is more for use as an overflow catch than a breather.
